I was never good at math. To be honest, I downright hated it. But one day each year, I made sure to really pay attention in class. I have March 14 to thank, because where all things pi(e) are considered, I’m an expert.
I worked at the Kroger bakery one summer in college, and it was then while clad in my icing-stained apron and dorky Kroger-branded baseball hat, that I fell in love with pie. I can say I’ve eaten an entire pie in one 8-hour shift, and I wouldn’t be lying. The job was rough, I know.
Minor side-note, If you haven’t tried Kroger’s peach raspberry pie, you’re missing out. It’s heaven in a cardboard box. The perfect combination of sweet and tart.
Although I don’t condone an all-pie diet, I did lose five pounds. Coincidence? Maybe, but I think I might be on to something. Move over, paleos.
In memory of my bakery days and as a salute to Pi Day, I decided to whip up my own rendition of a warm-weather favorite, the peach raspberry pie. I put my own little twist on this recipe by adding in raspberries. I also let the peaches and raspberries “marinate” for several hours in the fridge before scooping them into the pie crust.
So, whether you’re a math whiz or just a lover of any holiday for the excuse to eat pie, I hope you have a great Pi(e) Day!
